Peru Marañón Nacional 2020

The Nacional bean was once thought to be extinct for nearly 100 years after disease had wiped out the crop in the 1910s. In Peru’s Marañón region, the bean variety was rediscovered in 2007. The cacao tree that produces these beans yields up to 40% white cocoa beans with some pods being filled completely with white cocoa beans. The result is a unique buttery cocoa with prominent flavor notes of rich fruits and nuttiness balanced with a soft, delicate chocolatey flavor. The flavor profile of these beans is truly complex and exquisite.
