  1. The process of using a conche to agitate and evenly distribute cocoa mass.
  2. The part of the chocolate making process in which chocolate gets its unique and distinct flavor.

Cocoa beans have different flavor profiles based on the region in which they are grown and harvested. A bean from Madagascar will taste different than a bean from Peru. Flavors can range from nutty to fruity, bitter to astringent, sweet to chocolatey.
